This 4* hotel in the centre of Burgundy’s wine capital, Dijon, is set in the heart of city in a building dating back to 1863. Originally a post relay, it was converted into an inn later in the 19th century, before it eventually became the Hostellerie du Chapeau Rouge. The hotel was fully renovated in recent years under the direction of William Frachot, who works to create a harmony between hospitality and cuisine as both the hotel’s owner and double Michelin-starred chef.
